Tomato Rice Treasure

(serves 4)


Ingredients

90 g (1/2 cup) rice, uncooked
30 mL (2 tablespoons) tomato puree
125 mL (1/2 cup) tomato juice
125 mL (1/2 cup) water
5 g (1/2 tablespoon) vegetable oil
10 g (2 pips) garlic, pounded
60 g (1 small) onion, sliced
100 g (2) tomatoes, chopped
125 g (1/2 cup) tender cut of beef (eg. strip loin), thinly sliced
salt and sugar to taste


Method

1. In and electric rice cooker, cook rice with tomato puree, 1/4 cup of tomato juice and water.
2. Meanwhile, sauté garlic and onions in a separate pan. Add in chopped tomatoes and remaining tomato juice. Add beef slices. Cook until the meat is tender. Add extra water, if required.
3. Remove from flame and set aside.
4. Scoop cooked rice into small round jelly moulds. Make a hollow at the centre of the rice and scoop in the stir-fried beef.
5. Turn out the tomato slice with beef onto a plate and serve.
