Stir Fry Vegetables with Shrimp and Fish

(serves 6)


Ingredients

10 g (1 tablespoon) vegetable oil
100 g (1) onion, sliced
30 g (6 pips) garlic, crushed
50 g (1/2) red pepper, chopped
50 g (1/2) yellow or green pepper, chopped
15 mL (1 table spoon) lime juice
light soya sauce to taste
60 mL (1/4 cup) water
100 g (1/2 cup) medium-sized shrimp, shelled and defined
50 g (1/4 cup) fish fillet
90 g (3/4 cup) long beans, cut into 2.5 cm pieces
50 g (1/2 cup) snow peas


Method

1. Heat oil in a pan. Add onion, garlic and stir fry for 2 minutes. Add red and yellow/green pepper, lime juice and light soya sauce, and stir fry for another 3 minutes. Add in water.
2. Add prawns and fish fillets, stir fry for another 5 minutes or until the color of the prawns change.
3. Add long beans and snow peas. Continue to stir-fry until the long beans and snow peas are cooked.
4. Serve hot.
