Pumpkin Pudding

(serves 6)


Ingredients

400 g (3 cups) pumpkin, skinned, seeded, sliced and mashed
100 g (2) eggs
180 g (1/3 cup) sugar
125 ml (1/2 cup) fresh milk
60 g (4 tablespoons) butter, melted
200 g (1 2/3 cups) all-purpose wheat flour, sieved


Method

1. Beat sugar and butter in a mixing bowl. Add in eggs and continue beating. Add in flour and mashed pumpkin, and mix well.
2. Add egg mixture into the pumpkin mixture. Mix well.
3. Grease a 20 cm round cake tin. Pour mixture into tin.
4. Bake in preheated oven at 200°C for 40 minutes or until it turns yellowish brown.
5. Cut the pudding into small slices when it is cool.
