Homemade Chicken Cooking Stock

This recipe is for making 800ml-900ml of chicken cooking stock.


Ingredients

800g assorted chicken bones
3 table-spoon table salt
Sprinkle of white pepper (optional)


Method

1. Remove fat, skin and blood clots from the chicken bones. Wash the bones thoroughly.
2. Boil chicken bones in 1 L (4 cups) water. Upon boiling, turn to low heat and simmer for 30 minutes.
3. Strain and chill in refrigerator overnight. Remove the top layer of fat from chilled chicken stock. Stock can be refrigerated for a week or frozen for a month.
