Fruit Pudding

(serves 5)


Ingredients

1 cup fresh fruit flesh (e.g. mango, banana, and pear)
30 ml (2 tablespoons) water
5 ml (1 teaspoon) lemon juice
15 g (1 tablespoon) unflavored gelatin
45 ml (3 tablespoons) hot water
165 ml (2/3 cup) fresh milk
15 g (1 tablespoon) sugar
50 g (1) egg, beat
100 ml (2/5 cup) evaporated milk, kept chilled


Method

1. Puree 2/3 of the fruit with 30 ml of water.
2. Cut the rest into small pieces and add lemon juice to prevent it from browning.
3. Dissolve gelatin into boiling water, stirring until crystals disappear.
4. To make pudding mixture: heat the fresh milk with sugar. stir in beaten egg, and continue stirring over low heat until the mixture thickens slightly (do not boil). Remove.
5. Add in the dissolved gelatin.
6. Beat the evaporate milk with a fork, and mix in pureed fruit and pudding mixture.
7. Line the bottom of pudding mould with cut fruit pieces.
8. Pour in the fruit and pudding mixture and refrigerate for 4 hours, or until set.
9. Turn out the pudding on to a plate and serve.
