Chocolate Oat Doughnut

(serves 4)


Ingredients

1/3 cup of instant oats
300 g sweet potatoes (peeled)
10 tablespoons of self raising flour
1 egg
Salt to taste
4 tablespoons of sugar
2 tablespoons of chocolate rice
1 tablespoon of icing sugar (sieved) - for decorative purpose


Method

1. Steam sweet potatoes until soft.
2. Mash the sweet potato until becomes pasty.
3. Mix the sweet potato paste with instant oats, self raising flour, egg and sugar until mixture is well-mixed.
4. Place the batter/mixture in between two pieces of plastic paper and roll it out to a thickness of 2cm (3/4 inch).
5. Use a doughnut cutter to cut into rings.
6. Heat up 2 cups of cooking oil in the pot.
7. Fry the doughnuts over medium heat until the color turns golden brown.
8. Sprinkle icing sugar and chocolate rice on top (or honey is a good substitute) before served.
