Banana Pancakes

Ingredients

120 g (1 cup) all-purpose wheat flour, sieved
200 g (2) ripe bananas, mashed
10 g (1 tablespoon) grated coconut (optional)
28 g (2 tablespoons) sugar
300 ml (1 1/4 cup) fresh milk
15 g (1 tablespoon) honey or maple syrup
30 g (2 tablespoons) raisins
1 egg


Method

1. Mix all the above until it becomes thick batter.
2. Heat a non-stick pan and pour one ladle of the batter to thinly cover the bottom of the pan (tilt the pan to swirl the batter around evenly).
3. Cook until the lower half of the pancake starts to dry.
4. flip over and cook the other side.
5. Remove pancake and place on a plate.
6. repeat steps 2 - 5 with the remaining batter.
7. Serve with warm honey or maple syrup.
